Wow, we cannot elieve we are moving to Florida so soon! We will be on our way out of MN in only SEVEN days! :-0
The apartment complex/ community we are moving into requires renter's insurance so we were worried about how much that would be, but we just got it set up yesterday and it was UBER simple. Number one, every single phone call I have made to FL has been so pleasant! Everyone is kind and funny and polite... it's been SO nice dealing with them, and the people at our community are no different. They told me exactly how to sign up for everything, helped me understand a few rules and made me feel even more excited about living there if that's possible! The renters insurance was easy, just had to click on our community, chose our insurance and enter a payment method. AND for as much coverage as we are getting, it is only $18 a month! AWESOME! Don't worry we will be posting lots of photos :)
P.s. our community is called
Camden (friends and fam, we will share our address soon I promise!)... we're in a 1300 sq foot 2 bdrm with a den, two balconies, dishwasher, washer and dryer, cable and valet trash pick-up. The community sounds awesome-- it has controlled access, 4 pools, a hot tub, fitness center, playground, community activities, a campground and more! Plus it looks to be in a great area with a lot of cool stuff nearby!
We are all job hunting, and will be each bringing a folder of resumes for the local job hunt. I already found a dance teaching sub job which is cool, but I'm on pins and needles waiting to hear back from the two museums I applied to!!!
In other news, we have about 5 days left to pack before we clean and move out on Monday! My mom's and Jesse's last days of work were yesterday, mine is Saturday :( I will miss the toy shop! We have a going away party Saturday night for our Duluth pals, and next week we have our baby shower and going away shindig for our families-- it's going to be a mixed bag of emotions that is for sure!! The day of our shower is also mine and Jesse's one year anniversary! Can;t believe a whole year has gone by and already we're halfway to having a new member of the family :) We're both hiding cards and gifts around the apartment and making mean eyes at eachtoher when one goes snooping lol. I am SO excited though, I just got Jesse's gift today and I cannot WAIT to see how he likes it!!! :)

Tropical Storm Isaac IS slated to arrive in Tampa on Tuesday, but we DO have insurance on our place, it SHOULD be gone by when we get there Saturday and also it doesn't sound TOO bad as hurricances go, so I am maintaining an optomistic attitude about it all :)
Here is the recipe of the day:
Chicken Breasts with Mushroom Cream Sauce
(Because I am obsessed with the movie Julie/Julia)
Ingredients
- 2 5-ounce boneless, skinless chicken breasts, trimmed and tenders removed (see Tips & Techniques)
- 1/2 teaspoon(s) freshly ground pepper
- 1/4 teaspoon(s) salt
- 1 tablespoon(s) canola oil
- 1 medium shallot, minced
- 1 cup(s) thinly sliced shiitake mushroom caps
- 2 tablespoon(s) dry vermouth, or dry white wine
- 1/4 cup(s) reduced-sodium chicken broth
- 2 tablespoon(s) heavy cream
- 2 tablespoon(s) minced fresh chives, or scallion greens
- Season chicken with pepper and salt on both sides.
- Heat oil in a medium skillet over medium heat. Add the chicken and cook, turning once or twice and adjusting the heat to prevent burning, until brown and an instant-read thermometer inserted into the thickest part registers 165°F, 12 to 16 minutes. Transfer to a plate and tent with foil to keep warm.
- Add shallot to the pan and cook, stirring, until fragrant, about 30 seconds. Add mushrooms; cook, stirring occasionally, until tender, about 2 minutes. Pour in vermouth (or wine); simmer until almost evaporated, scraping up any browned bits, about 1 minute. Pour in broth and cook until reduced by half, 1 to 2 minutes. Stir in cream and chives (or scallions); return to a simmer. Return the chicken to the pan, turn to coat with sauce and cook until heated through, about 1 minute.
